I'll start...
Firefox - This is the biggest reason for me converting to linux. I have lots of sweet extensions, that radically change the web browsing experience. If it weren't for Firefox, I'd be using Windows for IE.
XMMS - A nice Winamp clone for Linux. I would probably use amaroK instead, but my computer is too slow. (600 Mhz)
VLC Player- Plays all the major video and audio formats just fine for me.
GAIM - All the instant messengers in one, baby!
Abcde (A Better CD Encoder) - For ripping my music collection.
Easytag - For tagging my MP3's and OGG's
Leafpad - The fastest text editor I have seen, much faster than Gedit and Kate
Abiword - Does everything I need for word processing, and it's faster than OpenOffice
Bibletime - Great bible reading software. The word of God at my fingertips!
Banshee - For keeping up with all the latest podcasts.
WINE - For those stubborn Windows programs that don't have Linux equivalents yet
Ndiswrapper - Forces the Windows drivers for USB Wifi adaptors to work in Linux.
And I can't forget my windows manager, Fluxbox. My computer is 6 years old so I'm not going to use GNOME or KDE .
