This is the cheapest I've seen for good bulbs that don't require a hub, and Anker is a decent, reputable brand. These work with an app as well as with Amazon Alexa, etc. They're also custom dimmable. $14 each with code KINJABUL if interested.

Think I'm gonna grab 7-8 of them for like $100 or whatever to use for a dimmable dining room table light and a few other places around the house.

Yeah they seemed pretty decent. Was looking at the reviews earlier today. My question is how does this work with standard room lights with wall switches? Would I just have to leave the light switch on all the time?

Correct. Basically, you leave the switch on if you want to control via the app and voice, etc.

You can still just use on/off via the switch like normal.

Hue Ambience (white) lights are the same price now as well I believe.

I wonder if these will continue to drop in price like regular LED's did (you can find regular, non-dimmable, LED's at Dollar Tree for $1 now!)....

I actually just replaced EVERY bulb in my house with LED's, so I don't plan on going full-on smart any time soon, but for certain places in the house I think it would be worth it.
