Hire a private investigator to hack her and figure out if she’s been fudging with you.

Based on your topics here, this sounds like a good thing she's doing.

That sucks man. I'd hire a PI to see if they can find any evidence of this harassment. If their able to find the evidence, sue her for harassment and make sure it goes to trial. Issue a restraining order and list out that she cannot contact you or any of your family, friends, or employers.

If someone defames you, if sued, do they have to prove what they said is true or do you?

In a civil suit, if the case goes to a jury, you just need to convince the jury that you're not the type of person that would do horrendous things. She would have the burden of of proving that what she said was true to defend herself.
